After the big effort of Thanksgiving week, there were still opportunities to help at the Back to Basics Kitchen. In the couple weeks following the holiday, Rouse reprised his excellent rendition of dishwashing. I helped put clean dishes away, prepped ingredients, packaged and labeled lots of product. For my grand finale... I hand-pressed 37 date-nut pie crusts. Working in a commercial kitchen feels a bit like living in a fairy tale. Everything exists in such grand scale!
